Food Hack: 8Cuts’ Onion Rings

- 2 large white onions, sliced into half inch rounds
- 1 cup heavy cream
- 2 tbsp. lemon juice
- 1 tsp. baking powder
- ¾ cup flour
- ½ cup cornmeal, finely ground
- ½ tbsp. barbecue powder
- 1 tsp. salt
- 1 cup club soda, chilled
- ½ cup light beer, chilled
- 1 cup flour
- Oil, for frying
- 3 tbsp. barbecue powder
- In a large bowl, mix together cream and lemon juice.
- Add onions and soak for 30 minutes.
- While the onions are soaking, prepare batter.
- In a large bowl, whisk together baking powder, ¾ cup flour, cornmeal, barbecue powder, and salt.
- Stream in club soda and light beer, whisking continuously, until a thin batter forms.
- Heat oil to 375F.
- Add 1 cup flour to a large bowl.
- Remove onions from soak and let excess drop off.
- Add onion to the bowl with flour and toss, coating each onion in flour.
- Take each piece and shake off excess flour, then dip into batter.
- Place onion rings into the fryer and fry until lightly golden brown.
- Remove from oil and drain on paper towels.
- Dust each onion ring in barbecue powder once removed from the fryer.
- Serve hot.
